Processing dates monthly in Northern Illinois and the Black Hills region of South Dakota. Processing dates will be the first available opening based on date of your deposit.
Processing fees are paid directly to the processor

Raised outdoors on pasture with winter feed of stockpiled forages (hay)
Locally processed at family owned, humane USDA inspected meat processor
How it works:
When you pay a deposit, we will put you on our list and reserve beef (or portion of beef) for you.
The balance will be due at the time of delivery to the processor. You will be charged $5 per pound for the actual hanging weight of the beef.
Balance for the beef can be paid directly on our website.
Beef will hang/age for approximately two weeks. During this time, you will communicate your cutting and wrapping instructions directly to the processor.
Once the beef is cut, wrapped, and frozen, processor will contact you to come pick it up.
Processing cost is paid at time of pick up.
